The word cotton candy is enough to bring back nostalgia, to remind you of easier days full of sweet treats and not a care in the world… Two significant memories related to cotton candy are- one, enjoying it at fairs and second, when the cotton candy vendor used to pass by on the road in front of the house screaming, “Budhiya ke baal,” and our eyes would instantly light up and we would give our parents or grandparents the puppy eyes to buy us some cotton candy. While you reminisce, here are two cotton candy dessert recipes that are totally worth a shot.

Cotton Candy Flavour Recipes


Recipe 1- Cotton Candy Cake
This recipe is quite simple to follow and quick. We are going to make the cotton candy flavour come alive by using a cake flavour essence and a little red food colouring for effect.

Serves: 8-10 people
Prep time: 30mins
Baking time- 20-25 mins

Ingredients-
Plain flour- 1 ½ cups
Sugar- 1cup
Oil- 125ml
Baking Powder- 2 teaspoon
Eggs- 4
Milk- ¼ cup
Salt- ¼ teaspoon
Fab Premium Oil Soluble Cotton Candy Flavour- 1 teaspoon

Method-
Grease two 7 inch pans and preheat the oven at 180°C. Sieve plain flour, baking powder and salt into a bowl, mix and keep aside. Beat the eggs for 1 minute and add sugar to it. Beat it till mixture turns thick and creamy. Add Fab Premium Oil Soluble Cotton Candy Flavour, milk and oil to the egg and sugar mix. Next, fold in the dry ingredients. Option to add a few drops of red food color to give the batter a cotton candy effect but don’t mix it. Instead, give it a marble effect. Divide the batter equally in both pans and bake for 25-30 minutes. Allow the cakes to cool down completely.

Take whipping cream and add few drops of Premium Oil Soluble Cotton Candy Flavour and whip till firm peaks. Use this to frost the cake and option to add candies, popsicles, cotton candy or chocolates to decorate the cake.

Recipe 2- Cotton Candy Mahalabia
Mahalabia is the Arabic cousin of Custard or Italian Panna Cotta and is a popular Middle Eastern dessert. It is a creamy, rich, and mildly sweet milk dessert. A bite of this dessert is sure to take you back to your childhood days, when we all enjoyed Cotton Candy! The fluffy, cloudy, and overly sweet Cotton Candy is every child’s favourite.

Serves: 6-8 people
Prep time: 20 mins
Finishing Time: Chill for 2 hours

Ingredients-
Milk- 1 litre
Cream- 250 ml
Corn Flour- 7 tablespoons
Sugar- ¾ cups
Fab Oil Soluble Cotton Candy Flavour- 4 tsp
Cotton Candy, Chocolate sauce, Jam, Sugar Sprinkles and Pomegranate arils for garnishing

Mahalabia Method-
From the 1 litre milk separate out 1 cup milk. To this, add corn flour and mix well so that there are no lumps at all. Now take a pan with a heavy bottom and pour in rest of the milk and cream for boiling on low heat. Also add sugar to this and continuously keep stirring. Once mixed, add the corn flour and milk mixture to the simmering milk, sugar and cream mix. Constantly stir the mix till the milk thickens and tiny air bubbles start to appear. Turn off the heat and add in the cake flavour essence. Mix this well and then divide the mix and pour into individual serving bowls or cups and allow it to cool down. When it is approximately at room temperature, cover the cups with a cling film and put them into the fridge for at least 2 hours. It will thicken when cold.

Garnish-
There are endless options for garnishing this flavorful dessert. To keep it nutty and simple, use crushed pistachios and almonds, or make it fancier by topping it up with dried Rose petals. If petals aren’t accessible, rose syrup also makes for a wonderful topping. You can dilute the syrup with some water and drizzle over. Another fairly simple but delicious garnish idea is using some berries or fruits. This particular Cotton Candy flavored Mahalabia recipe uses Chocolate sauce and Jam for garnishing.

Take the individual bowl or cup in which you have set the Mahalabia. Drizzle some chocolate sauce or diluted Jam over it. You can even choose to put either on alternate cups to create a variety. Garnish by sprinkling some pomegranate arils and / or sugar sprinkles. Serve this delicious cotton candy flavour dessert chilled.
